Schanzlwirt x Oberer Germuth

22.08.2026

Back in June we set ourselves a task: bring Southern Styria to Graz. Not as a nod, not as decoration – but for real. The Brettljause came from the Buschenschank, the wines from the Oberer Germuth family estate. Instead of a good hour's drive out to the Wine Road, simply head over to Leonhardplatz.

An inn and a winery, under one roof for a whole summer.

Now that summer is drawing to a close. And because you don't just let something like this fade out, we're marking the occasion with what crowns the whole thing: a five-course dinner on 22 August. This time not a Jause, but a menu – the Germuths are coming in person, bringing their wines, and our kitchen spans the arc from the scarlet runner bean to the blueberry dumpling.

One evening, one menu, then the season closes. We have room for 40 guests – no more.

Menu

Scarlet runner bean tartlet

pumpkin seed oil gel | pickled mustard seeds | crispy bacon

Cured Styrian trout

clear cucumber consommé | cucumber oil

Chilled leek soup

house-made sour cream sorbet

Crispy fried Tafelspitz

marinated baby potatoes | chive sauce

48-hour braised pork belly

BBQ pointed cabbage | bacon espuma | potato buchtel

Blueberry & vanilla

blueberry dumplings | vanilla parfait

The right glass for every course – selected by the winemakers themselves. The vineyards of the Oberer Germuth family estate lie on the steep Maletschenberg and Pockenberg slopes above Leutschach, with views stretching all the way to the Slovenian border. Across a good six hectares, all the classic Styrian grape varieties grow here – from fresh regional wines to terroir-driven single-vineyard bottlings.

We start punctually at 6:30 pm, as all guests are guided through the menu together.

Parking: Green Zone parking in Schanzlgasse, or the parish car park of St. Leonhard Parish – opposite, on the other side of the intersection.

99€ p.P. - wine pairing inclusive
